Storage Conditions: The ripeness of celery can be recognized by the change in the color of its middle leaves from green to light green, the correct and complete growth of the petioles, and finally when a complete bunch of petioles have formed. Chilling celery should be done immediately after harvesting to prevent wilting and weight loss. Celery should be kept at a temperature of zero degrees Celsius. The relative humidity should be between 90 and 95%. Also, celery should not be placed next to products that produce ethylene gas.
