Storage Conditions: Tomato color is the most important criterion for determining the harvest time. Immediately after harvesting (within 12 hours at most), tomatoes should be packed, sent or kept in a cold room. The optimum storage temperature of tomatoes in relation to its degree of ripeness should be according to the following table:
