Chicory
Chicory consists of an aerial branch, root and fruit of the plant Cilchorium Intybum L. of the compositae family. The stem of this plant in the wild type is 0.5 to 1.5 meters high and its cultivated type is about 2 meters. The chicory stem is narrow and has few branches in the area near its head. This plant has a strong root with the diameter of a finger and is 0.5 to 1 meter long. Its color is brown and its section tends to be white. The leaves are alternate and covered with many threads around the middle veins. Its flowers are beautiful and blue in color, covering all its stems and branches, and in some cases, they are white or purple flowers. Chicory leaves contain sulfates, sodium phosphates, magnesium, potassium, and glucoside. Chicory root contains inulin, glucose, levols, sucrose and a mucilaginous resin substance and a little tannin.
