Slivered Almonds

Almond slices are long slices of shelled nuts without the third skin, which are divided into two or four pieces along the length of the almond nut, and its two ends have a natural curve. To prepare almond slices, first, the almond kernel with the second skin (brown skin) is washed in a pot and kept in purified water at room temperature for 12 hours. After this time, heat the water until it reaches a temperature of 70-80 degrees Celsius and keep it at this temperature for 20 minutes until its texture is soft and ready for peeling. The almond kernel enters the kernel machine and is cut in half. Then it is transferred on a conveyor belt to separate the almond shells. Almond kernels without skin enter the slicing machine and after slicing, they are transferred to the dryer. At the end, the slices are dried and transferred to the packaging machine.

Mamra almond is one of the most popular and important almonds in the world. This type of almond is much larger in size than other almonds and has a very good taste. The flowering and ripening time of the Mamra almond tree is estimated to be medium to late. The skin of Mamra almond is relatively wooden and hard. Mamra almond is exported abroad, especially to India. Almond kernel is the kernel of the fruit of the tree with the scientific name Amygdalus Communis L. of the Rosaceae family, whose first and second skins have been removed. Mamra almonds comprise approximately 57% of almond production in Iran. Chaharmahal and Bakhtiari and West Azarbaijan provinces are the main producers and exporters of Mamra almonds in Iran, and almost 65% of almond orchards in these provinces are dedicated to this type of almonds. Mamra almond kernel has the best color and is almost golden. Due to the proper amount of fat in this almond, it is used in the production of cosmetics and hygiene products, in addition, it also has its place in the nut and dry fruit industries.
